Ingredients:
4 cups (1 32-oz container) chicken or vegetable stock
4 tbsp olive oil
3/4 cup chopped yellow/white onion
1/4 cup chopped shallots
1/2 cup chopped scallions
1/2 tsp salt
1/2 lb mushrooms
1 oz dried porcini mushrooms (regular is okay also)
2 tbsp butter
3/5 cup freshly grated parmesan
black pepper
